I am using VLC running in Ubuntu 14.04.

I had the best luck with DIVX, and 480 vertical resolution.

Steps:
1. Open VLC and press Ctrl+R (Media -> Convert/Save)
2. Click the "Add..." button to select the source video.
3. Click "Convert/Save"
4. For profile, click the button on the right to "Create a new profile"
5. A new window will pop up to edit the profile.
6. Enter "Spark EV" for name.
7. Select "AVI" for Encapsulation
8. Go to the video codec tab, and check "Video"
9. In the "Encoding parameters" sub-tab select "DIVX3" as the video codec. (bitrate did not seem to have any effect)
10. In the "Resolution" sub-tab enter 480 for height.
11. Click on the "Audio codec" tab and check Audio
12. In the "Encoding parameters" sub-tab change the codec to "MP3".
13. Select a "Sample Rate" of 44100 Hz
14. Click "Create". You now have a video profile you can use for future videos.
15. Back in the "Convert" window, select "Spark EV" as the profile.
16. Enter a "Destination file": Click "Browse" to select the folder, and type in the new file name in "Name:". Do not include the file extension in the file name.
17. Click "Start"
18. VLC will now convert the video. When the blue bar goes away the new video is ready to be copied to the USB.
